Pineapple Upside-Down Cake

Sorry for just suddenly dying for a year and a half. Life sorta just happened.

Hopefully I'll get back into blogging more frequently. fingers crossed.

This dessert is one of my all-time favourite desserts. My mum used to make it for special occasions/functions at home back in the day. I haven't had it in about a good 6 years at least, I think. Now that I'm back home and we were having a sorta dinner thingy at home I wanted to eat it soooo badly. My mum fussed saying that it was too much effort and she couldn't be bothered. So I took up the challenge to make it. I had never made it before, nor have I ever seen one being made. Anyhoo, i jumped right into it. everyone at the dinner loved it, and were equally excited that there was pineapple upside down because they hadn't eaten it in ages.

Ready --- Steady --- Cook

Pineapple Upside-Down Cake
(Serves 10)

INGREDIENTS:
1 Pineapple sliced
250g Jaggery (grated)
230g Flour
230g Sugar
115g Butter/margarine
4 Eggs
1 tsp Baking powder
1 tbs Vanilla
Pinch of salt
extra butter to grease and dot 
cherries for decoration


METHOD:

1. Pre-heat the oven to 200°C. Grease baking tray with butter.
2. spread a relatively thick layer of grated jaggery evenly in the tray. (1cm)
3. dot the jaggery with small bits of butter (help the jaggery melt when baking)
4. take out the pineapple cores and arrange them in the tray.
5. melt the butter and set aside to cool.
6. beat eggs and sugar together on high speed till light and fluffy.
7. mix the dry ingredients togther and fold it into the egg/sugar mixture gradually.
8. gradually fold in the melted butter till mixed well.
9. pour into pan and bake for 30-40 minutes until baked.
10. once out of the oven turn it over onto a serving dish and put cherries.
11. Serve hot or cold with ice cream.
